Simply Amazing Date Caramel Slice

Yumm!! This delicious treat is not soooo naughty and super fine when the need for a little sweet joy creeps into your life.

A perfect way to wean yourself off those other nasty white sugar things you may have been indulging in.  Certainly not for every day but amazing on occasions!!

For those of you who I have been promising this recipe to for a while I am sorry but it is finally here, and worth the wait.

* Now to do this recipe justice you really do need a high powered blender or you will not get the caramel texture but give it a go in an ordinary one if that is all you have.

Simply Amazing Date Caramel Slice Recipe

BASE

3/4 cup desiccated coconut

pinch sea salt

1/2 cup raw almonds

1/2 cup pitted dried dates (the cheaper ones, not the lovely fresh ones we use later)

1/8 cup coconut oil, melted

Place all ingredients into blender except coconut oil and blend until texture of fine bread crumbs. Add oil and pulse to combine. Press into a greased 20cm springform pan and place in fridge while preparing the next layer.

CARAMEL FILLING

8 dates, pitted

1 cup raw cashews

2 pinches sea salt

1/2 cup coconut cream, the top rich layer only

1/4 cup coconut oil, melted

Blend all ingredients except coconut oil really well until very smooth. this will take a few minutes. Add coconut oil and blend until super smooth and gooey. Spread over base layer and return to fridge.

CHOCOLATE TOPPING

1/2 cup coconut oil, melted

1/8 cup maple syrup

1/4 cup coconut cream, top desiccated layer only

1/4 cup raw cacao powder

In a small double boiler or jug that can sit in a bowl of boiling water mix all ingredients except coconut oil until smooth. Stir in melted coconut oil and mix well. Pour over caramel layer and refrigerate for several hours. To remove from tin take a hot cloth and hold around edges of tin fro a few seconds. For easy slicing place whole slice in freezer for twenty minutes or so and then it will be really easy to cut beautiful slices for you or your friends.
